Ingredients

  • 1/3 cup oil
  • 1/2 cup honey or agave
  • 1 egg
  • 1/2 cup plain White Mountain Yogurt
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup shredded zucchini
  • Optional: 2 tsp orange zest, 3/4 cup walnuts, raisins, or chocolate chips

  1. Preheat oven to 350°F. Grease a 9×5” loaf pan.
  2. In a bowl, whisk together oil, honey, egg, yogurt, and vanilla.
  3. In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients. Gently fold in zucchini and any optional mix-ins.
  5. Pour into the pan and bake for 40-50 minutes, until a toothpick comes out clean.
  6. Cool completely before slicing.
